Zucchini and Yam Fritters

 

Ingredients

– 2 cups shredded zucchini

– 2 cups shredded yams (peeled first)

– 1 cup shredded cheddar cheese

– 2 eggs

– 1/4 cup breadcrumbs

– 1/4 teaspoon salt

– 1/4 teaspoon ground black pepper

– 1/4 teaspoon garlic powder

– 1/4 teaspoon Mrs Dash original blend

 

Preparation

Stir all ingredients together in a large bowl. Scoop 1/4 cup mounds of mixture onto a greased baking sheet and flatten to shape into patties.

 

Bake at 425F for 15 minutes. Flip and bake for another 10 minutes until golden brown.
