Tuna patties are a remarkable easy, simple and healthy dish to throw together. They make a wonderful light meal in summer…Don’t leave out the dill sauce!!!
RECIPE:
Makes 14 Patties
To make the Patties:
3 (160g/5.6oz) Tins Tuna in oil, drained
3 Eggs beaten
Zest of 1/4 Lemon
3 Tbls Parmesan cheese
1 Stick Celery finely chopped
Small Onion finely chopped
2 Garlic, crushed
1/2 Cup Breadcrumbs
1 Teaspoon Dijon mustard
Fresh Chives, chopped
Parsley, chopped
Salt and pepper
Mix all ingredients together and form into patties. Leave them to rest in the fridge for at least an hour.
Heat 2 tbls olive oil with a teaspoon butter and fry the patties in a pan just for a few minutes on each side.
To make the Dill Sauce:
1/4 Cup Mayonnaise
1/4 Cup Sour cream
1/2 Teaspoon Garlic powder
Teaspoon Lemon juice
Fresh or dried Dill herbs to your liking
Pinch of Salt
Mix all ingredients together. Either drizzle the sauce on top of the patties or serve on the side.
