TORTELLINI PASTA SALAD

This is one of those pasta salads that you will want to make more than once…Please do try!!

Delicious served as a snack, meal, a barbecue accompaniment and also perfect to take to the beach!

 

Ingredients

450g/1lb (2 pkts) Barilla Cheese Tortellini

Salami, cut in small cubes

Orange Bell Pepper, diced

Tin or Jar Black Olives, cut in half

300g/11oz Mozzarella balls, cut in quarters

Cucumber, cut in quarters

Small Onion, finely chopped

Cherry tomatoes, cut in half

Chopped Parsley

Approx 100g/4oz Feta cheese, broken into small pieces

 

Dressing

1/4 Cup White Wine Vinegar

3/4 Cup Olive oil

1 teaspoon Oregano

2 Garlic, crushed

1/2 teaspoon Dried Red Chopped Chillies

Salt/pepper

Combine ingredients in a pint size jar and shake vigorously.

 

Method

Pasta Salad

Cook the tortellini but not completely, a few minutes less than their actual cooking time. Drain and rinse in cold water.

Add all the above mentioned ingredients and dressing except the feta cheese. Mix together, then add pieces of feta cheese and give it one final mix.

Chill in the fridge before serving. The longer it stays in the fridge the dressing absorbs into the pasta and makes it even more tastier! Enjoy
