Ingredients

2 Green Apples

2 Eggs

3 Tbls (45g/1.6oz) Sugar

3 Tbls Melted Butter plus extra for on top

1 1/2 Tbls Plain Flour

370g/13oz Plain Greek Yogurt

 

Topping:

Juice of 1/2 Lemon

Dried Fruits (Currants, Raisins or Sultanas)

Chopped Walnuts

Cinnamon

Sugar

Melted Butter

 

Method :

Spray an 8″ cake tin with nonstick cooking spray and line the base with baking paper bringing it outside of the tin or you can use a 20cm x 20cm cake pan.

Thinly slice apples with peel.

In a bowl with a hand balloon whisk, mix the eggs and sugar well. Add yoghurt mix, add the butter mix then add the flour.

Poor into prepared cake thin.

Top with sliced apples slightly overlapping each other.

Squeeze lemon juice over the apples, drizzle melted butter, sprinkle some sugar, cinnamon, dried fruits and walnuts.

Bake in oven 180C/350F for 50 minutes.
