Ingredients:
– 1 lb premium sirloin steak, cut into bite-sized cubes
– 1/2 lb large shrimp, peeled and deveined
– 2 tablespoons extra virgin olive oil
– 3 cloves garlic, finely minced
– 2 tablespoons unsalted butter
– 1 tablespoon fresh lemon juice
– 1 tablespoon fresh parsley, finely chopped
– Sea salt and freshly ground black pepper, to taste
Instructions:
- Heat 1 tablespoon of extra virgin olive oil in a large, heavy-bottomed skillet over medium-high heat until shimmering.
- Season the steak cubes generously with sea salt and freshly ground black pepper. Add them to the hot skillet, allowing them to sear undisturbed for 1-2 minutes. Turn the cubes to brown all sides, cooking for 3-4 minutes total for medium-rare. Transfer to a warm plate.
- Add the remaining tablespoon of olive oil to the same skillet. Once hot, arrange the shrimp in a single layer. Cook for 2-3 minutes, flipping once, until pink and just opaque. Transfer to the plate with the steak bites.
- Lower heat to medium and melt the butter in the skillet. Add minced garlic and sauté for 60 seconds until fragrant, avoiding browning. Incorporate fresh lemon juice and chopped parsley into the sauce.
- Return the steak bites and shrimp to the skillet, gently tossing to coat with the garlic butter sauce. Warm through for 1-2 minutes.
- Serve immediately with your choice of sides such as mashed potatoes, rice pilaf, or roasted vegetables. Garnish with fresh parsley and lemon wedges.
Pro Tip: Let your steak come to room temperature 30 minutes before cooking for the most even searing and tender results.
