Instructions:
Preparing the Skewers :
In a large bowl, combine olive oil, minced garlic, smoked paprika, dried oregano, salt, and pepper.
Add beef cubes and shrimp to the bowl, tossing to coat evenly with marinade. Sit for 15-20 minutes.
Thread beef cubes and shrimp onto skewers, alternating between the two.
Cooking the skewers:
Preheat your grill to medium-high heat.
Grill the skewers for about 2-3 minutes per side, or until the beef is cooked to your desired doneness and the shrimp are pink and opaque.
Make the chimichurri sauce:
In a medium bowl, combine chopped parsley, cilantro, minced garlic, olive oil, red wine vinegar, lemon juice, dried oregano, red pepper flakes (if using), salt, and pepper.
Mix well until all ingredients are evenly distributed. Adjust seasoning to taste.
To Serve:
Place cooked skewers on a serving platter.
Drizzle some chimichurri sauce over skewers, reserving the rest to serve on the side.
Garnish with fresh parsley or cilantro if desired.
