Have you ever tried stuffing Maltese Bread with Vegetables and cheese? …Then you must try this!!
Ingredients:
1 Small round Maltese Bread
1/2 Red Bell Pepper, sliced
1/2 Yellow Bell Pepper, sliced
Small Onion, sliced
1 Garlic Clove, chopped
Sundried Tomatoes, chopped
1 Tomoto, sliced
Kalamata Olives without stones
Tomato Paste
3 Slices Pepato Cheese
Capers
Fresh Chopped Basil
Method:
Cut the top off the bread. Remove the inside, leaving just the crust.
In a little olive oil fry the onions and peppers together, don’t stir to often so they will slightly burn. When they start to soften add the chopped garlic and cook for about a minute until fragrant. Season with salt/pepper and set aside.
With a brush coat the inside of the bread with tomato paste and the top slice.
Now you can start filling the bread by starting with a layer of the cooked peppers, sundried tomatoes, olives, capers, fresh basil, sliced tomatoes and 2 slices of pepato cheese. Repeat the whole process again until the bread is filled, then top with a chopped slice of pepato cheese.
Cover the bread with the top piece and brush the bread all over with olive oil.
Bake in oven 180C/350F for 20 minutes.
