Ingredients:
1 Small Onion, finely chopped
2 Garlic Cloves, crushed
1 Red Bell Pepper, chopped
2 (160g/5.6oz) Tins Tuna, drained
450g/16oz Frozen Spinach thawed and drained
1 Large Tin Artichokes, chopped
4 Tbls Black Olives, sliced
150g/5.3oz Feta Cheese, crumbled
2 Tbls Fresh Mint and Basil chopped
3 Tbls Breadcrumbs
1 Beaten Egg for egg wash
2 Rectangular Sheets Puff Pastry or 3 Round cut into 12 triangles
Pie can also be made the normal way, not in ring form.
Method:
In a large deep pan add a little olive oil and fry the onions and garlic together until softened. Add the red pepper and cook for just 2 minutes only so the pepper won’t become too soft. Season with freshly ground pepper.
Remove the pan from heat and allow to cool.
Strain and press out the water from the thawed spinach and add to the pan. Mix through, then add all the remaining ingredients leaving the feta cheese last.
Brush the top of the pie with beaten egg and sprinkle over sesame seeds.
Bake in oven 200C/400F until pastry is cooked and golden.
