Spicy Shrimp & Garlic Tortellini

 Ingredients:

1 lb shrimp (peeled and deveined)

12 oz tortellini (cheese-filled or your choice)

4 cloves garlic (minced)

1 tbsp olive oil

1/2 cup heavy cream

1/2 cup chicken or vegetable broth

1 tsp red pepper flakes (adjust for heat)

1/2 cup parmesan cheese (grated)

1 tbsp fresh lemon juice

Salt and pepper to taste

Fresh parsley (for garnish)

 

 Instructions:

Cook the tortellini:

Prepare tortellini according to package instructions.

Drain and set aside.

Sauté the shrimp:

In a large skillet, heat olive oil over medium heat.

Add shrimp, season with salt, pepper, and red pepper flakes.

Cook for 2-3 minutes per side, until pink and cooked through.

Remove shrimp from the skillet and set aside.

Make the sauce:

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

Add the chicken or vegetable broth, heavy cream, and lemon juice.

Simmer for a few minutes until slightly thickened.

Combine everything:

Add the cooked tortellini and shrimp back into the skillet, stirring to coat them in the creamy garlic sauce.

Stir in parmesan cheese, and adjust seasoning if needed.

Serve:

Garnish with fresh parsley and extra parmesan, and enjoy this deliciously spicy, creamy dish!
