Ingredients:
12 oz spaghetti
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
4 cups fresh spinach
Salt and pepper to taste
Fresh basil, chopped (for garnish)
Instructions:
Cook spaghetti according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sun-dried tomatoes, cooking until fragrant.
Pour in heavy cream and bring to a simmer. Gradually stir in Parmesan cheese until the sauce is smooth and creamy.
Add spinach to the skillet, cooking until wilted, then toss in the cooked spaghetti.
Season with salt and pepper, garnish with fresh basil, and serve warm.
Notes:
For a protein boost, add grilled chicken or shrimp!
