Ingredients
100g/3.5oz Rolled Oats, crushed
2 Eggs
1 Medium Red Apple, finely chopped with peel
1/2 Peeled Red Apple, diced
120g/4.2oz Greek Yogurt
40g/1.41oz Stevia or sweetener of your choice or 75g (2.6oz) Sugar
50ml Vegetable Oil
7g Baking Powder
1 Tsp Vanilla Essence
100g/3.5oz Fresh Blueberries
1/4 Tsp Ground Cinnamon
1/4 Tsp Salt
Slivered Almonds for on top
8 Inch Springform Cake Tin
Method:
Preheat oven 180C/350F.
In a large bowl whisk the eggs, sugar and salt till well combined.
Add the yoghurt, oil, vanilla essence and whisk till creamy.
With a spatula first fold in apples, then oats, cinnamon and baking powder altogether.
Line the base of your cake tin with baking paper and bring it outside the tin.
Butter grease the sides and slightly grease the baking paper too.
Pour the batter into prepared cake tin. Scatter the blueberries on top and with your finger push them down just below the surface. Now scatter the diced peeled apples followed by the slivered almonds.
Bake in oven for approximately 35 minutes or until skewer stick inserted comes out clean. Being that this is a small cake and isn’t baked for too long the almonds might now brown alot. If you want them a little more crunchy, just as soon as the cake is ready put it under the grill for a few minutes.
