SHRIMP SALAD – DELICIOUS AND FILLING!

Savoury seared shrimp marinated in spices, with fresh flavourful veggies, feta cheese and honey mustard sauce.

 

Ingredients:

Shrimp:

500g/17.6oz Shrimp

1 Tsp Onion Powder

1 Tsp Garlic Powder

1 Tsp Paprika

1 Tsp Lemon Pepper Seasoning

1 Tsp Italian Seasoning

Salt & Pepper

2 Tbls Olive Oil

 

Salad:

Mixed Lettuce Leaves

Avocado, sliced

Cucumber, sliced

Mixed Sliced Olives

Cherry Tomatoes, halved

Hard Boiled Eggs, halved

Feta Cheese, crumbled

Tuna Stuffed Tomatoes

 

Dressing:

2 Tbls Lemon Juice

1 Tbls Dijon Mustard

1 Tbls Maple Syrup or Honey

1 Clove Garlic, crushed

2 Tbls Apple Cider Vinegar

1/4 Cup Olive Oil

Pinch Salt

In a mixing bowl, whisk together the lemon juice, apple cider vinegar, dijon mustard, garlic and maple syrup. Drizzle in the olive oil, whisking continuously. Season with a pinch of salt to taste. Set aside.

 

Method:

Shrimp –

In a small bowl mix the onion, garlic, paprika, lemon seasoning, Italian seasoning, salt and pepper together. Leave to marinate for 30 minutes.

Place the shrimp in a large bowl, drizzle 2 tablespoons olive oil, mix to coat then add the seasoning and mix together.

In a large pan, pour 4 tablespoons olive oil. When the oil is hot, on medium heat fry the shrimp for 1 minute per side. When cooked stir in the marinade left in the bowl. Allow to cool for a few minutes before assembling the salad.

 

Salad Assemble –

Lay the mixed lettuce leaves on a plate. Arrange veggies on top with crumbled feta. Top with shrimp, feta cheese and drizzle with dressing all over to your liking.
