Ingredients:
– 12 egg roll wrappers
– 1 lb corned beef, thinly sliced
– 1 cup sauerkraut, drained
– 1 cup Swiss cheese, shredded
– 1/4 cup Thousand Island dressing
– 1 egg, beaten (for sealing)
– Vegetable oil (for frying)
– Extra Thousand Island dressing (for dipping)
Directions:
- Lay egg roll wrapper on surface, add corned beef.
- Add sauerkraut, Swiss cheese, and dressing.
- Fold wrapper, seal with beaten egg.
- Repeat with remaining wrappers.
- Fry in oil until golden and crispy.
- Drain on paper towels.
