Ingredients:
1 lb steak, cut into bite-sized pieces
4 large potatoes
4 tablespoons butter, divided
3 cloves garlic, minced
1 cup shredded cheddar cheese
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash the potatoes thoroughly and place them in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
Drain the potatoes and place them on the prepared baking sheet. Use a fork or a potato masher to gently smash each potato.
Drizzle the smashed potatoes with olive oil and season with salt and pepper. Sprinkle shredded cheddar cheese on top of each potato.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
While the potatoes are baking, heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the steak bites and cook for 3-4 minutes on each side, or until browned and cooked to your desired doneness. Remove the steak bites from the skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Cook for 1-2 minutes, or until the garlic is fragrant.
Return the steak bites to the skillet and toss to coat with the garlic butter sauce. Cook for an additional 1-2 minutes, or until heated through.
Serve the garlic butter steak bites over the cheesy smashed potatoes and garnish with fresh parsley.
