Ingredients:

For the Salt Beef Club Sandwich:

1 lb salt beef or corned beef, thinly sliced

6 slices of sandwich bread, toasted (rye or sourdough works great)

4 slices Swiss cheese or cheddar

4 slices of crispy bacon

2 large tomatoes, sliced

Leafy lettuce

1/4 cup mayonnaise

1 tablespoon Dijon mustard

For the Cajun Fries:

2 large russet potatoes, cut into fries

2 tablespoons olive oil

1 teaspoon Cajun seasoning

Instructions:

Make the Cajun Fries:

Prep the Fries: Preheat your oven to 425°F (220°C). Toss the potato fries with olive oil, Cajun seasoning, and a pinch of salt until well-coated.
