Salmon, Shrimp, Corn and Broccoli

Enjoy a balanced and flavorful meal with this Salmon, Shrimp, Corn, and Broccoli dish. The combination of seafood and fresh vegetables makes for a delicious and healthy dinner.

 

You will need:

– 4 salmon fillets

– 1/2 lb shrimp, peeled and deveined

– 2 ears of corn, kernels removed (or 1 1/2 cups frozen corn)

– 2 cups broccoli florets

– 3 tbsp olive oil, divided

– 3 cloves garlic, minced

– 1 lemon, sliced

– 1 tsp paprika

– 1 tsp dried thyme

– 1 tsp salt

– 1/2 tsp black pepper

– Fresh parsley, chopped (for garnish)

– Lemon wedges (for serving)

 

 Directions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. In a small bowl, mix 2 tbsp of olive oil, minced garlic, paprika, dried thyme, salt, and black pepper.
  3. Place the salmon fillets on the prepared baking sheet. Rub the garlic and olive oil mixture over the salmon fillets.
  4. Arrange the shrimp around the salmon fillets. Drizzle with the remaining 1 tbsp of olive oil.
  5. Scatter the corn kernels and broccoli florets around the salmon and shrimp.
  6. Place lemon slices over the salmon fillets.
  7. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the shrimp are pink and opaque. The vegetables should be tender.
  8. Remove from the oven and let it rest for a few minutes.
  9. Garnish with chopped fresh parsley and serve with lemon wedges.
