Ingredients:

2 cups fresh spinach
1 salmon fillet, grilled or pan-seared
2 soft-boiled eggs, halved
1/2 cup cherry tomatoes, halved
1/2 avocado, sliced
1/2 cup cooked quinoa (red, white, or mixed)
1/4 cup mixed olives (green & black)
1 tablespoon chopped fresh parsley

Dressing:

2 tablespoons olive oil
2 tablespoons lemon juice
1/2 teaspoon minced garlic
Salt & black pepper to taste
