Rustic Dublin Coddle with Sausage and Potatoes

Ingredients:

4 large potatoes, peeled and sliced

1 pound pork sausages

8 slices of bacon, chopped

2 large onions, sliced

2 cloves of garlic, minced

2 cups chicken broth

1 cup water

1 teaspoon dried parsley

1 teaspoon dried thyme

Salt and pepper to taste

 

Directions:

Preheat your oven to 350°F (175°C).

In a large skillet, cook the bacon over medium heat until crisp. Remove bacon and set aside, leaving the fat in the skillet.

Brown the sausages in the bacon fat, then set aside with the bacon.

In the same skillet, sauté onions and garlic until translucent.

Layer half of the potatoes in a large baking dish, followed by half of the onions, garlic, bacon, and sausages. Repeat the layers with the remaining ingredients.

Pour chicken broth and water over the layers and sprinkle with dried parsley, thyme, salt, and pepper.

Cover the dish with foil and bake in the preheated oven for about 1 hour, or until the potatoes are tender.
