Ingredients:
For the Steak:
2 ribeye steaks (about 1-inch thick)
Salt and pepper to taste
2 tablespoons olive oil
2 cloves garlic, smashed
4 sprigs fresh thyme
For the French Onions:
2 large onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon sugar
1/2 teaspoon salt
1/4 cup beef broth (optional)
For the French Fries:
4 large potatoes, peeled and cut into fries
2 tablespoons olive oil
Salt to taste
Pepper to taste
Directions:
Step 1: Prepare the French Fries
Preheat your oven to 425°F (220°C).
Toss the cut potatoes in olive oil, salt, and pepper.
Spread them out on a baking sheet in a single layer.
Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Step 2: Season and Cook the Steaks
Season the ribeye steaks generously with salt and pepper on both sides. Let them sit at room temperature for 30 minutes before cooking.
In a large skillet or grill pan, heat the olive oil over high heat until shimmering.
Add the ribeye steaks and cook for about 4-5 minutes on each side for medium-rare, or adjust the cooking time to your desired doneness.
During the last minute of cooking, add the smashed garlic and thyme sprigs to the skillet. Spoon the infused oil over the steaks to enhance the flavor.
Remove the steaks from the skillet and let them rest for 5 minutes.
Step 3: Caramelize the Onions
In a large skillet, heat the butter and olive oil over medium heat.
Add the sliced onions, sugar, and salt. Cook, stirring occasionally, until the onions are soft and golden brown, about 25-30 minutes. If the onions start to dry out, add a splash of beef broth to keep them moist. Remove from heat and set aside.
Step 4: Serve
Transfer the ribeye steaks to a serving plate.
Top each steak with a generous amount of caramelized onions.
Serve alongside the crispy French fries.
Garnish with fresh thyme sprigs if desired.
