Ingredients:
Filling:
300g/10.6oz Potatoes
300g/10.6oz Ricotta
1 Egg
100g/3.5oz Ham, cubed
50g/1.76oz Grated Parmesan Cheese
2 Tbls Olive Oil
Salt and Pepper
Beaten egg for egg wash
Sesame Seeds to scatter on top of pastry
1 Round Sheet Shortcrust Pastry
Method:
Peel, wash and cook the potatoes whole in a pan of water until nearly cooked through but not completely. Leave to cool then cut into coarse pieces but not too big.
In a bowl mix with a hand whisk the ricotta, egg, salt and pepper. Add the parmesan cheese and mix everything until you get a sort of cream, then stir in the chopped ham, potatoes and olive oil.
Open the pastry, leave it on its packaging baking paper and place in a round shallow dish.
Spoon the filling on top leaving a 1 inch boarder around the edges. With your fingers pleat the pastry over the filling, brush the pastry with beaten egg and sprinkle sesame seeds on top.
Bake in oven 180C/350F for about 45 minutes or until pastry is cooked and golden.
