PORK STEW

RECIPE:

 

Ingredients:

 

600g/21oz Pork (Shoulder or Neck) cut into bite size pieces

1 Large Onion, diced

3 Cloves Garlic, crushed

1 Large Potato, diced

3 Carrots, sliced

Tin Peas

1 Tin 400g/14oz Diced Tomatoes

1 Tin 400g/14oz Tomato Juice

100ml Red Wine

100ml Chicken Stock

1 Tbls Tomato Paste

2 Bay Leaves

2 Tsp Mild Curry

1 Tsp Paprika

1/2 Tsp Mixed Spice

Salt and Pepper

 

Method:

 

Heat a little olive oil in a deep pan and brown the pork. Remove and set aside.

To the same pan fry the onions. When they start to soften add the garlic and saute just for 1 minute.

Add the potatoes and carrots, stir through then add the spices and tomato paste. Now add the pork and mix everything together.

Add the wine, stock, both tins of tomatoes, bay leaves, salt and pepper.

Simmer covered for 1 1/2 hours or until meat is tender.

When ready add the tin of peas, stir through and turn off heat. Leave to rest for 5 minutes and serve.
