Ingredients:

1 pound boneless, skinless chicken breasts, sliced thin

1 tablespoon olive oil

1/2 onion, chopped

1 can (15 oz) pineapple chunks, drained

1/4 cup soy sauce

1/4 cup honey

1/4 cup rice vinegar

1 clove garlic, minced

1/4 teaspoon red pepper flakes (optional)

2 cups cooked rice

Instructions:

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken and cook until browned. Remove the chicken from the skillet and set it aside.

Sauté the Onion: In the same skillet, add the chopped onion and sauté until it becomes soft and translucent.

Add Pineapple and Sauce: Incorporate the drained pineapple chunks into the skillet. Then, pour in the soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes (if you’re using them). Stir well to combine.

Combine and Heat Through: Return the browned chicken to the skillet. Toss everything together until the chicken is evenly coated in the sauce and heated through.

Serve: Spoon the mixture over the cooked rice and enjoy!
