PENNE AL MANZO – PENNE WITH BEEF

Simple, delicious flavour and ready in 30 minutes!

 

Ingredients:

250g/8.8oz Penne Rigate

Beef Strips

2 Cloves Garlic, minced

Cherry Tomatoes, halved

1 Elmlea Double Cream (heavy cream), room temperature

1 Tbsp Tomato Paste

50ml White Wine

50ml Vodka

Salt & Pepper

Grana Padano shavings and freshly chopped parsley to serve

 

Method:

Cook Pasta according to package instructions while preparing the beef and sauce.

Heat a little olive oil in a pan, add the strips of beef and cook until lightly browned. Add the tomato paste and garlic. Stir though for about 1 minute then add the cherry tomatoes and season with salt and pepper. Cook for 1 to 2 minutes then add the wine and vodka and continue cooking for a minute more. Add the cream, stir through for about 2 minutes then add the cooked and drained pasta. Stir through until pasta is well coated.

Serve with grana padano shavings and chopped fresh parsley.
