PEACH AND VANILLA PUDDING PARFAITS

Summer is still here and this dessert is so perfect if you want to have something that is light and refreshing. The homemade pudding is so simple to make, you will want to make it again!

 

Ingredients:

1/2 cup sugar

1/4 cup cornflour

1/4 teaspoon salt

2 1/2 cups whole milk

4 egg yolks

2 tbls unsalted butter

1 teaspoon vanilla essence

Pkt peach jelly

150ml Elmlea double cream (whipped)

Orange food colouring (optional)

Method:

In a pan add the sugar, salt, cornflour and mix together. Then add a little bit of milk and cream it all together. Add the egg yolks, mix together then add the rest of the milk. Cook on medium heat, stirring constantly until the mixture thickens up. Remove from heat and stir in the butter and vanilla. Pour a little of the filling into to your dessert glasses. Leave to cool and chill for 1 hour before adding the peach jelly layer.

Prepare the peach jelly as per instructions. Leave to cool then add the whipped cream a few spoons at a time and mix together with a hand balloon whisk. When ready you can add some orange colouring to brighten up the colour. Pour the jelly into your glasses then leave in the fridge to set completely for 2/3 hours. Top with the second vanilla layer and decorate with fresh peaches or nectarines. A few added blueberries would also go nicely with them as well. The piped cream on top is optional. Enjoy!
