Ingredients:

For the salad:

2 large chicken breasts, boneless and skinless

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

6 cups mixed greens (romaine, arugula, spinach, etc.)

4 slices of sugar-free bacon, cooked and crumbled

2 hard-boiled eggs, peeled and sliced

1 avocado, sliced

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

1 clove garlic, minced

1 teaspoon honey or maple syrup (optional for paleo sweetener)

Salt and pepper to taste

Instructions:

Prepare the chicken:

Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.

Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side, or until fully cooked (165°F internal temperature). Let rest for 5 minutes, then slice or dice.
