Oven-Baked Cod with Fresh Chimichurri

Just baked this succulent Cod with Chimichurri Sauce! Perfectly seasoned and topped with fresh herbs, it’s a dinner winner!

Ingredients:

4 cod fillets

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh parsley, chopped

4 garlic cloves, minced

1/4 cup red wine vinegar

1/2 cup olive oil

1 teaspoon red pepper flakes

1/2 teaspoon ground cumin

 

Directions:

Preheat the oven to 400°F (200°C).

Season the cod fillets with salt and pepper.

Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the cod fillets for 2-3 minutes on each side until golden brown.

Transfer the seared cod fillets to a baking dish and bake in the preheated oven for 10-12 minutes, or until the fish flakes easily with a fork.

While the cod is baking, prepare the chimichurri sauce. In a bowl, combine the chopped parsley, minced garlic, red wine vinegar, 1/2 cup olive oil, red pepper flakes, and ground cumin. Mix well.

Once the cod is done baking, spoon the chimichurri sauce over the top and serve immediately.
