Ingredients:

For the Soup:

2 tbsp butter

1 tbsp olive oil

4 slices bacon, chopped

2 large onions, thinly sliced

3 cloves garlic, minced

1 lb (450g) mushrooms (mix of button, cremini, or shiitake), sliced

1/2 cup dry white wine (optional, for depth)

4 cups beef or vegetable broth

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

Salt and pepper, to taste

1/4 cup heavy cream (optional, for added creaminess)

For the Cheesy Toasties:

4 slices crusty bread (like baguette or sourdough)

1 cup shredded Gruyère, Swiss, or sharp cheddar cheese

2 tbsp butter

 

Instructions:

Cook the Bacon:

In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.

Caramelize the Onions:

Add the butter and olive oil to the pot with the bacon fat. Add the sliced onions and cook over medium-low heat, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.

Add Garlic and Mushrooms:

Increase the heat to medium. Add the garlic and mushrooms to the pot with the onions. Cook until the mushrooms are tender and have released their juices, about 8-10 minutes.

Deglaze the Pot:

Pour in the white wine, if using, to deglaze the pot. Scrape up any browned bits from the bottom. Let the wine reduce for about 3-4 minutes.

Simmer the Soup:

Add the broth, thyme, and cooked bacon to the pot. Bring the soup to a boil, then reduce the heat to a simmer. Let it cook for 15-20 minutes, allowing the flavors to meld. Season with salt and pepper to taste. Stir in the heavy cream for a creamy finish, if desired.

Prepare the Cheesy Toasties:

While the soup is simmering, preheat your oven broiler. Butter one side of each bread slice and place them on a baking sheet, buttered side down. Sprinkle cheese generously on top. Broil for 2-3 minutes or until the cheese is melted and bubbly. Watch closely to prevent burning.
