MOST SOFT FUDGY CHOCOLATE ZUCCHINI LOAF CAKE

A delicious low calorie Breakfast Snack or Dessert! You will never know it is made with a vegetable. Please do try!!

Ingredients

1 1/4 Cups Plain Flour

1/4 Cup plus 2 Tbls Cocoa Powder

3/4 Teaspoon Baking Powder

1/2 Teaspoon Baking Soda

1/4 Teaspoon Salt

2/3 Cup Demerara Cane Sugar

1 Cup Packed finely grated Zucchini (Dark green 220g/7.76oz)

3/4 Cup Plain Yogurt

1/4 Cup Vegetable Oil

2 Teaspoons Vanilla Essence

1/3 Cup Dark Chocolate Chips plus extra for on top

 

Method:

Preheat oven 180C/350F.

Grease a 9×5 inch loaf tin with nonstick cooking spray.

Stir together all the dry ingredients in a large bowl.

Add remaining ingredients and stir with a rubber spatula to form a batter then add the chocolate chips.

Smooth into the loaf tin and sprinkle extra chocolate chips on top.

Bake for 35 minutes then turn off the oven and with the door still closed leave for an extra 5 minutes.

Leave to cool completely before removing from the tin.
