MEDITERRANEAN CHICKEN AND AVOCADO SALAD

Ingredients:

2 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 avocado, sliced

1 cup cooked chicken breast, sliced

2 hard-boiled eggs, quartered

1/4 cup kalamata olives

1/4 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Dressing:

2 tablespoons lemon juice

2 tablespoons olive oil

Salt and pepper to taste

1 clove garlic, minced

 

Instructions:

Prepare the Dressing:

In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper. Set aside.
