MARINATED CHICKEN BAKED IN THE OVEN WITH POTATOES GARLIC AND LEMON

Ingredients:

1.5Kg/3lbs Chicken Pieces

For the marinade

2 Tsp Paprika

2 Tbls Fresh Rosemary

2 Tsp Granulated Garlic

2 Tsp Onion Flakes

1 1/2 Tsp Thyme

2 Tsp Sage

1 Tbls Dijon Mustard

1/3 Cup Olive Oil

3 Tbls Lemon Juice

12 Whole Garlic Cloves unpeeled

Baby potatoes, skin on, washed and cut in half

Additional olive oil and fresh rosemary

 

Method:

Mix all marinade ingredients together in a large bowl. Add the chicken and garlic and make sure they are coated well.

Cover and marinate for a few hours or overnight with the pieces of lemon peel left from the squeezed juice.

Half the baby potatoes and toss with some olive oil, salt/pepper and fresh chopped rosemary.

Place chicken, potatoes, whole garlic and lemon rind in a large baking dish. Sprinkle extra paprika on top of the chicken and bake in oven 220C/425F for 1 hour or until chicken is fully cooked through and potatoes are golden brown.
