MALTESE PASTA OMELETTE – TARJA MOQLIJA

A simple meal yet so good!

Ingredients:

250g/8.8oz Vermicelli (Angel Hair Pasta)

3 Eggs

75g/2.6oz Parmesan Cheese

100g/3.5oz Bone-in-Ham, chopped into small pieces

2 Cloves Garlic, crushed

2 Tbls Chopped Fresh Parsley

Salt and pepper

 

Method:

Cook the vermicelli pasta until al dente. Strain and set aside. Allow to cool slightly before adding to the egg mixture.

In a large bowl beat the eggs first then mix all the ingredients together.

Add the cooked pasta to the mixture and mix through well.

On medium heat, heat some olive oil in a 8 inch sized frying pan. Add half of the pasta and egg mixture and cover the bottom of the frying pan.

Let it cook until it is golden then flip and continue cooking the other side. To minimize breakage whilst flipping, cover the pan with a plate and flip the omelette on to the plate first before putting it back in the pan.

Repeat with the other half of the mixture. Serve hot.
