Kusksu is one of Malta’s traditional most loved comfort foods. A delicious heartwarming soup made with Broad Beans, Giant Couscous, Gbejna (Fresh Maltese Cheeselets) and Eggs.
Ingredients: (Serves 4)
250g/8.8oz Peeled Broad Beans, fresh or frozen
1 Onion diced
2 Potatoes diced
3/4 Carrots sliced not too thin
2 Zucchini sliced and halved
3 Tbls Tomato paste
1/2 Teaspoon Mild Curry Powder
Tip of a teaspoon Mixed Spice
2 Litres Water
2 Chicken Cubes
250g/8.8oz Kusksu Pasta
Fresh Gbejniet (Fresh Maltese Cheeslets)

Method:
In a large deep Casserole pan, fry the onions in 2 tablespoons butter. When they start to soften add the broad beans and stir through for about 1 minute.
Add crumbled chicken cubes, curry, mixed spice and tomato paste. Mix well then add the vegetables, season with pepper and 2 litres of water.
Simmer covered for about 30-45 mins or until carrots and vegetables are nearly cooked but not completely (so they won’t be overcooked by the end of cooking time).
Uncover the pan, add eggs and cook for about 5 minutes or until they are completely cooked.
Add the gbejniet (maltese cheeselets) and leave to cook for about 15 minutes, then add the kusksu and continue cooking until pasta is cooked al dente.
