MALTESE BREAD PUDDING

A delicious traditional bread pudding that is very easy to make. Maltese bread pudding is made with stale-leftover bread, dried fruit, nuts, chocolate and spices

 

RECIPE:

Servings 12

Stale Maltese loaf of bread (Sour dough Bread)

Milk to soak the bread

100g/3.5oz Butter, melted

100g/3.5oz Sugar

3 Eggs

40g/1.4oz Cocoa powder

50g/1.76oz Drinking Chocolate

100g/3.5oz Sultanas

100g/3.5oz Currents

50g/1.76oz Roasted Hazelnuts, chopped

1/4 Teaspoon Mixed spice

1/4 Teaspoon Cinnamon

Pinch Nutmeg

2 Tbls Jam

Zest of half orange and Lemon

Teaspoon Vanilla essence

2 Tbls Amaretto

 

Method:

Soak the bread in milk for 30 minutes then put it in a strainer and squeeze out the milk.

Put the bread in a large bowl. First mix in the eggs then the melted butter and remaining ingredients.

Butter grease a 28cm/11-inch pie dish and dust with flour. Add the filling and bake in oven 180C/350F for 50 mins. Remove and decorate as desired. Serve warm or at room temperature. Enjoy!
