These lemon coconut balls are a simple and nutritious treat to get you through a busy day!
RECIPE:
Servings 12
1 Bliss Ball 147 Kcal
Ingredients
150g/5.3oz Roasted Cashews
45g/1.6oz Shredded Coconut
175g/6.2oz Mediool Dates
2 Tbls Lemon Juice
1 Tsp Vanilla Essence
2 Tbls Maple Syrup or Honey
Tsp Lemon Zest
Extra Coconut for rolling
Method:
Place all ingredients in a food processor and process until all ingredients come together.
Form into balls and roll in shredded coconut (if you find it difficult to roll into balls, refrigerate the mixture for 30 minutes).
Refrigerate to harden and store in an airtight container.
