Ingredients
– 2 teaspoons baking powder
– 1/2 teaspoon baking soda
– cup shortening
– 5 eggs
– 2 1/4 cups flour
– 1/4 cup lemon juice
– 1 tablespoon grated lemon rind
– Salt
– 1 1/2 cups sugar
– 2 tablespoons Cold water
– 1/2 cup wheat germ
Preparation
Preheat oven to 350F.Sift the flour, baking soda, baking powder and salt into bowl. Using a pastry blender, cut the shortening into the flour as though making a pie crust.Stir in sugar, wheat germ, lemon rind and eggs.
Combine lemon juice with water and stir in.
Mix enough to moisten the dry ingredients.
Pour batter into a greased loaf pan and bake for 1 hour or until cake tester or wooden toothpick inserted in center comes out clean.
