Lemon and Broccoli Pasta with Shrimp

Ingredients:

1 pound shrimp, peeled and deveined

Zest and juice of 1 lemon

2 cups broccoli florets

8 ounces whole wheat pasta

4 cloves garlic, minced

2 tablespoons olive oil

1/2 teaspoon red pepper flakes (optional)

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Instructions:

1️⃣ Cook the pasta according to package instructions. In the last 3 minutes of cooking, add the broccoli florets to the pot. Drain and set aside.

2️⃣ In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

3️⃣ Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.

4️⃣ Stir in the lemon zest, lemon juice, and red pepper flakes (if using).

5️⃣ Add the cooked pasta and broccoli to the skillet. Toss to combine and heat through.

6️⃣ Season with salt and pepper to taste.

7️⃣ Garnish with fresh parsley before serving.

Notes :

◻️ For a vegetarian option, substitute the shrimp with chickpeas or tofu.

◻️ Add a sprinkle of Parmesan cheese for extra flavor.
