One of our all time favourite traditional Biscuits enjoyed during the Lent Period. These Biscuits have a slightly crisp exterior and a soft chewy center. The ultimate Maltese Biscuit!
Ingredients:
400g/14.11oz Ground Almonds
50g/2oz Stork Margarine
350g/12.3oz Sifted Self-Raising Flour
340g/12 oz Sugar
2 Tbls Cocoa Powder
1/2 Tsp Cinnamon
1/2 Tsp Nutmeg
1/4 Tsp Ground Cloves
Juice and Rind of 2 Oranges
Grated Rind of Tangerine
1 Tbls Orange Blossom Water (Ilma Zahar)
Topping:
Golden Syrup or Honey
Roasted Almonds, chopped
Method:
Mix margerine with flour then add all the dry ingredients. Mix well then add remaining ingredients.
Shape the biscuits into small logs and place on a baking tray with baking paper, do not flatten, they will spread out in the oven on their own.
Bake in oven 180C/350F for about 20-25minutes. They should be soft to touch when they come out of the oven.
When cooled brush with golden syrup or honey and top with chopped roasted almonds.
