JUICY AND TENDER BAKED CHICKEN THIGHS WITH A MUSTARD HONEY GLAZE!

Ingredients

7/8 Chicken Thighs depending on size

Salt/pepper

 

Sauce:

2 Tbls Olive Oil

1 Tbls Whole Grain Dijon Mustard

1 Tbls Dijon Mustard

2 Tbls Honey

4/5 Garlic Crushed

1/4 Teaspoon Red Pepper Flakes

 

Method:

Preheat oven to 220C/425F.

Place the chicken in a bowl and season generously with salt/pepper.

Hand whisk all the sauce ingredients together in a small bowl and coat the chicken thighs from both sides well leaving a little so you can use later on top.

Transfer the chicken thighs to a shallow baking dish and coat the top again with the remaining sauce. No need to grease the dish.

Bake for about 45 minutes or until chicken is cooked through.

Serve on a bed of Misticanza salad with side potatoes and pour the juices from the dish over the chicken.
