Ingredients:

 

  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 2 large eggs
  • 6 slices of bread, crusts removed
  • Butter for greasing
  • Powdered sugar for dusting

 

Directions:

 

.  In a bowl, mix the fresh berries with 1/4 cup of granulated sugar and let them macerate for 15 minutes.

.  In another bowl, whisk together the remaining sugar, vanilla extract, milk, heavy cream, and eggs.

.  Cut the bread slices into quarters and lightly butter each piece.

.  Arrange the buttered bread slices in a baking dish.

.  Spoon the macerated berries evenly over the bread.

.  Pour the milk and egg mixture over the bread and berries.

.  Press down gently to ensure the bread absorbs the liquid.

.  Bake in a preheated oven at 350°F (175°C) for 30-35 minutes or until the pudding is set and golden brown.

.  Remove from the oven and let it cool slightly.

.  Dust with powdered sugar before serving.
