Ingredients:
4 salmon fillets (about 6 oz each)
1/2 cup fresh pineapple, diced
1-2 jalapeños, seeded and finely chopped (adjust based on spice preference)
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons lime juice
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste
Fresh cilantro, for garnish (optional)
Directions:
▪️Prepare the Marinade:
In a small bowl, whisk together honey, soy sauce, lime juice, minced garlic, olive oil, and a pinch of salt and pepper.
Add the diced pineapple and chopped jalapeños, mixing well.
▪️Marinate the Salmon:
Place the salmon fillets in a shallow dish or resealable plastic bag. Pour half of the marinade over the salmon, reserving the other half for basting.
Let the salmon marinate in the fridge for 15-30 minutes.
▪️Cook the Salmon:
Preheat your grill or a large skillet over medium heat.
Remove the salmon from the marinade and grill or pan-sear each fillet for 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
▪️Baste and Serve:
While cooking, baste the salmon with the reserved marinade for extra flavor.
Once cooked, garnish with fresh cilantro if desired.
▪️Serve :
Serve the honey pineapple jalapeño salmon with your favorite sides, such as rice, grilled vegetables, or a fresh salad.
