Ingredients:
For the Skewers:
1/2 pound beef sirloin, cut into 1-inch cubes
1/2 pound large shrimp, peeled and deveined
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 large onion, cut into wedges
For the Honey Mustard Marinade:
1/4 cup honey
1/4 cup Dijon mustard
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 clove garlic, minced
Salt and black pepper to taste
Directions:
Prepare the Marinade:
In a small bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, minced garlic, salt, and black pepper.
Marinate the Ingredients:
Place the beef cubes and shrimp in separate bowls or zip-lock bags. Divide the marinade equally between the beef and shrimp, reserving about 1/4 cup for basting during grilling.
Let marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
Assemble the Skewers:
Thread the marinated beef, shrimp, red and yellow bell peppers, and onion wedges alternately onto skewers.
Grill the Skewers:
Preheat the grill to medium-high heat.
Grill the skewers, turning occasionally and basting with the reserved marinade, until the beef is cooked to desired doneness and the shrimp are pink and opaque, about 6-8 minutes.
Serve:
Serve the skewers hot, garnished with fresh herbs if desired.
