Honey Mustard & Apple Pork Chops

Ingredients:

6 thick-cut, bone-in pork chops

2 tbsp cooking oil, plus more for drizzling (vegetable, canola, or grapeseed oil)

Kosher salt, to taste

Ground black pepper, to taste

1 tbsp paprika

2 red apples, cored and sliced

1 medium yellow onion, sliced

1 tbsp fresh garlic, minced

1/2 cup apple cider vinegar

1 tbsp liquid smoke (optional)

1/2 cup coarse ground Dijon mustard

3/4 cup honey

1/8 tsp cayenne pepper

1/4 cup fresh parsley, minced

Instructions:

  1. Season the Pork Chops :

Trim any excess fat from the pork chops if necessary. Drizzle with a small amount of oil and massage it in. Season both sides with kosher salt, black pepper, and paprika.

  1. Sear the Pork Chops :

Heat 2 tbsp of oil in a large skillet over medium-high heat. Sear the pork chops for 1-2 minutes on each side until lightly browned. Transfer the chops to a wire rack on a sheet pan and set aside.

  1. Sauté the Apples & Onions :

Drain the skillet and add another tbsp of oil if needed. Add the sliced apples and onions to the skillet, sautéing over medium heat for 6-8 minutes until they’re mostly cooked. Add minced garlic and cook for another minute.

  1. Make the Honey Mustard Sauce :

Add the apple cider vinegar, liquid smoke (if using), Dijon mustard, honey, cayenne pepper, and half of the minced parsley to the skillet. Stir to combine, then bring the sauce to a simmer. Season with additional salt and pepper if needed.

  1. Finish Cooking the Pork Chops :

Return the pork chops to the skillet and baste them with the honey mustard sauce. Cook until they reach an internal temperature of 145°F, then remove from heat.

  1. Serve & Garnish :

Garnish the pork chops with the remaining parsley. Serve warm with your favorite sides and enjoy the sweet and savory flavors!
