Today, I whipped up a refreshing Grilled Chicken Avocado Salad with Creamy Cilantro Dressing, and let me tell you, it was such a hit! Perfect for a light lunch or a delightful dinner—it’s packed with goodness and flavor!

 

Ingredients:

1 lb (450g) boneless chicken breast,
1 tbsp olive oil,
1 tsp garlic powder,
1/2 tsp paprika,
1/2 tsp salt,
1/4 tsp black pepper,
1 tbsp lime juice,
4 cups romaine lettuce, chopped,
1/2 avocado, sliced,
1/2 cup cherry tomatoes, halved,
1/2 cup corn (grilled or canned),
1/2 cup cucumber, sliced,
1/2 cup Greek yogurt or mayo,
1/4 cup fresh cilantro, chopped,
1 tbsp lime juice,
1 tbsp olive oil,
1/2 tsp garlic powder,
1/4 tsp salt,
1/4 tsp black pepper.

 

Directions:

1. Grill the Chicken: Rub chicken with olive oil, garlic powder, paprika, salt, black pepper, and lime juice. Grill over medium-high heat for 5-6 minutes per side until golden and fully cooked. Let rest for a few minutes, then slice.
2. Prepare the Dressing: Blend or whisk together Greek yogurt, cilantro, lime juice, olive oil, garlic powder, salt, and black pepper until smooth.
3. Assemble the Salad: Arrange chopped romaine lettuce in a bowl. Top with sliced chicken, avocado, cherry tomatoes, corn, and cucumber.
4. Drizzle & Serve: Pour the creamy cilantro dressing over the salad. Garnish with extra black pepper and fresh cilantro.

Prep Time: 10 minutes. Cook Time: 15 minutes. Total Time: 25 minutes.

Nutritional Information: Approximately 500 calories per serving, with around 40g of protein.
