GOLDEN FRIED SHRIMP WITH HERBED POMMES FRITES

Ingredients:

For the Golden Fried Shrimp:

1 lb large shrimp, peeled and deveined

1 cup all-purpose flour

1/2 cup cornmeal (optional for extra crispiness)

2 eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

Vegetable oil for frying

Lemon wedges for serving

For the Herbed Pommes Frites:

4 large russet potatoes, peeled and cut into thin fries

2 tbsp olive oil

1 tbsp fresh parsley, chopped

1 tbsp fresh rosemary, chopped

1 tbsp fresh thyme, chopped

Salt and pepper to taste

 

Instructions:

For the Herbed Pommes Frites:

Prepare the Fries: Preheat your oven to 425°F (220°C). Toss the cut fries in olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.

Bake the Fries: Bake for 30-35 minutes, flipping halfway through, until the fries are golden and crispy.

Add Herbs: Once the fries are done, toss them with fresh parsley, rosemary, and thyme for an herbed finish.

For the Golden Fried Shrimp:

Prep the Shrimp: Pat the shrimp dry with paper towels and season with salt and pepper.

Set Up the Dredging Stations: In one bowl, combine the flour, cornmeal, garlic powder, paprika, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, add the panko breadcrumbs.

Coat the Shrimp: Dredge each shrimp in the flour mixture, dip it into the beaten eggs, and then coat it with panko breadcrumbs.

Fry the Shrimp: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the shrimp in batches for 2-3 minutes per side, or until golden brown and crispy. Drain on paper towels.

Serve:

Assemble: Serve the golden fried shrimp with the herbed pommes frites on the side. Add lemon wedges for squeezing over the shrimp, and enjoy with your favorite dipping sauces like aioli or cocktail sauce.
