Ingredients:

2 slices of black pudding

2 sausages

2 rashers of bacon

2 eggs

2 slices of bread

1 cup of mushrooms, sliced

1 cup of tomatoes, halved or whole

1 tbsp of butter

Salt and pepper to taste

Yellow mustard (optional)

 

Instructions:

Cook the sausages and bacon:

Preheat your grill or a large frying pan over medium heat.

Cook the sausages until browned and cooked through, about 10-15 minutes.

Add the bacon to the same pan and cook until crispy.

Prepare the black pudding:

Slice the black pudding into rounds.

Cook in the same pan or on a griddle until crispy on both sides, about 3-4 minutes per side.

Cook the mushrooms and tomatoes:

In a separate pan, melt the butter over medium heat.

Add the sliced mushrooms and cook until golden brown.

Add the tomatoes and cook until they are softened and slightly charred.

Fry the eggs:

In the same pan where you cooked the bacon and sausages, fry the eggs sunny-side up or to your preferred doneness. Season with salt and pepper.

Toast the bread:

Toast the bread slices until golden brown.

Assemble the breakfast:

On a large plate, arrange the cooked sausages, bacon, black pudding, mushrooms, tomatoes, and eggs.

Add the toasted bread on the side.

Serve with a dollop of yellow mustard if desired.
