Ingredients:

 

1 cup peanut butter (creamy or chunky based on preference)

1 cup granulated sugar (you can substitute with coconut sugar for a more natural option)

1 large egg

1 teaspoon baking soda

1 teaspoon pure vanilla extract

 

Instructions:

 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Mix Ingredients: In a large bowl, combine the peanut butter, sugar, egg, baking soda, and vanilla extract. Mix until well combined. The dough will be quite thick and sticky.

Shape the Cookies: Using your hands or a cookie scoop, take about a tablespoon of dough and roll it into a ball. Place it on the prepared baking sheet. Continue with the rest of the dough, placing each ball about 2 inches apart. Flatten each ball slightly with the back of a fork to create a crisscross pattern.

Bake: Place the cookies in the preheated oven and bake for about 8-10 minutes, or until the edges start to turn a light golden brown. The center should still be soft; they will firm up as they cool.
