An easy 30 minute meal and is sure to be a family favourite for seafood lovers!
Ingredients:
500g/1lb.2oz Raw Shrimp
1 Pkt Taco Seasoning
1/3 Cup Olive Oil
Juice of 1 Lime (2Tbls)
Lettuce
Sweetcorn
Black Beans or Kidney Beans
Cherry Tomatoes, halved
Hard Boiled Eggs
Salad dressing:
1/4 Cup Balsamic Vinegar
1/2 Tsp Dijon Mustard
1 Tsp Dried Oregano
1/2 Cup Olive Oil
Salt/pepper
Whisk together the vinegar, mustard and oregano. Slowly drizzle in the olive oil whisking vigorously until dressing is emulsified.
Method:
In a bowl combine the shrimp, olive oil, taco seasoning and lime juice. Allow to marinate for 30 minutes.
In a large skillet over medium heat saute the shrimps for a few minutes on both sides until opaque. Then add remaining marinade which was left in the bowl and stir through just until the shrimps are covered in the sauce.
Assemble salad, drizzle with dressing and top with shrimps. Add any other extra toppings of your choice and lime wedges for squeezeing.
