Simple, fresh ingredients, delicious flavour, and ready in 30 minutes!
Ingredients:
300g/10.5oz Pasta
250g/8.8oz Baby Spinach
400g/14oz Ricotta
2 Garlic Cloves, minced
1/2 Cup Parmesan Cheese
1 Tsp Lemon Pepper Seasoning
1 Tsp Italian Seasoning
Zest and Juice of a Lemon
2 Tbls Olive Oil
Salt and Pepper
Method:
Cook pasta al dente.
Meanwhile make the ricotta sauce. In a medium bowl, combine the ricotta, olive oil, parmesan cheese, garlic, lemon pepper, Italian seasoning, lemon zest and juice. Season with salt and pepper.
In the last minute of pasta cooking time, reserve 1/2 cup water, then add the spinach to the pot. As soon as it wilts, drain pasta and return to the same pan.
Add the ricotta sauce and a little of the reserved cooking water. Stir well to evenly coat the pasta in the sauce, add more cooking water if needed.
Serve immediately and garnish with extra parmesan cheese, lemon zest, pinch of chilli flakes and a drizzle of olive oil.
