Ingredients:

– 4 large eggs

– 1 cup all-purpose flour

– 1/2 cup unsweetened cocoa powder

– 1/2 cup sugar

– 1/4 cup vegetable oil

– 1/2 cup buttermilk

– 1 teaspoon vanilla extract

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– Purple food coloring (as desired)

– 1 cup cream cheese, softened

– 1/2 cup powdered sugar

– 1 teaspoon vanilla extract (for filling)

– 1 cup heavy whipping cream (optional for topping)

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a 15×10-inch jelly roll pan with parchment paper, greasing it lightly.
  2. In a large bowl, beat the eggs and sugar together until light and frothy. Stir in the vegetable oil, buttermilk, and vanilla extract.
  3. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  4. Add purple food coloring until you reach your desired hue. Pour the batter into the prepared pan, smoothing it out evenly.
  5. Bake for 12-15 minutes, just until the cake springs back when lightly pressed.
  6. While the cake is baking, prepare the filling by mixing the softened cream cheese, powdered sugar, and vanilla extract in a bowl until smooth.
  7. Once the cake is done, remove it from the oven and immediately turn it onto a clean, powdered sugar-dusted kitchen towel. Gently peel off the parchment paper.
  8. Spread the cream cheese filling evenly over the cake. Starting from one end, slowly roll the cake up with the towel, jelly-roll style. Let it cool completely in the towel.
  9. Once cooled, carefully unroll the cake, remove the towel, and re-roll it without the towel. Place it seam side down on a serving platter.
  10. Optionally, whip the heavy cream and spread it on top for an extra treat!
