These delicious brownie bites are packed with peanut butter flavor and come together quickly using a boxed brownie mix.

Ingredients:

2 (15 oz) packages brownie mix (any brand)
2 eggs
6 tablespoons vegetable oil
1/2 cup creamy peanut butter
2 tablespoons butter, softened
3/4 cup powdered sugar
1 cup chocolate chips (dark or semi-sweet)

Stand or hand mixer

Instructions:

Preheat oven to 350°F (175°C). Grease a mini muffin pan or line with mini muffin liners.
Make the brownie batter: Follow the instructions on the brownie mix package to prepare the batter, using the specified amount of eggs and oil.
Pour batter: Divide the batter evenly among the prepared muffin cups, filling them about halfway full.
Bake brownies: Bake for 10-12 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
Make peanut butter filling: While the brownies are baking, cream together the peanut butter, softened butter, and powdered sugar in a mixing bowl using a mixer until smooth. Roll the peanut butter mixture into small balls.
Assemble: Once the brownies are baked, immediately press a peanut butter ball into the center of each warm brownie. Let the brownies cool slightly in the pan for a few minutes before transferring them to a wire rack to cool completely.
Optional chocolate drizzle: If desired, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each interval, until smooth and melted. Drizzle the melted chocolate over the cooled brownie bites using a fork.
Chill and enjoy: For a firmer chocolate drizzle, refrigerate the brownie bites until the chocolate has set. Enjoy!
